Ingredients:

Brussels sprouts
ASS seasonings
1 tbsp EVOO
2 strips cooked bacon
1 shallot
Pad of butter


Prep:

Heat a cast iron pan to medium. Halve brussels sprouts, mince shallot and bacon bits and set aside.


Cook:

Coat the pan with EVOO. Sear the sprouts flat side down for ~4 minutes. Turn sprouts and add shallot, bacon bits, ASS to taste. Incorporate flavors for 2-3 minutes. Fold in pad of butter off heat and serve immediately.

 

Tip: Timing this side dish can be challenging so finishing in the oven is also an option, but no more than 5 minutes or the sprouts will lose their crisp texture.

These Brussels Sprouts are game changers, even people who don’t think they like them – they fall in love.

    Vegan mod:
    Hot cast iron pan, olive oil down first, then ASS in the pan, then Brussels cut side down in the ASS. Spray tops with olive oil. 4minutes on high heat, then under broiler for 4 more.
    Pull the pan. Toss on the shallots and cook them on residual heat, tossing with the Brussels. Just make sure you get every last bit of ASS and shallot on the plate with them
