Complex Asian infused ribs with distinctly sweet and savory fruit flavor with a caramel glaze finish. Absolutely fantastic on your weber kettle grill or smoker with cherry, applewood and hardwood charcoal

Marinade Ingredients

Marinade ribs for up to 24 hours in advance or 2-4 hours ahead of smoking on the day of the cook.

  • Soy sauce
  • Sesame oil
  • Garlic
  • Sriracha
  • Ginger
  • Fish sauce
  • Water
  • Lemongrass

Mop Ingredients

  • ASS
  • Smoked Dijon
  • Mango chutney
  • Fish sauce
  • Soy sauce
  • Sesame oil
  • Ginger
  • 2 tbsp caramel

Glaze

Brush on in final 30 minutes of smoke time

  • Soy sauce

Smoking Instructions

Prepare a full chimney of hardwood charcoal for 4 hours of cook time.  Place ribs to cook indirectly off the heat, add cherry, apple, and hickory wood chunks directly on the coals.  Smoke ribs for 1 hour , mop and check.  Repeat 2 more times until ribs are nearing the finish. Apply glaze in final 30 minutes of cook time.

Plating

Plate ribs after 4 hours of smoke time and drizzle with caramel, sprinkle with toasted sesame seeds and minced green onion. Enjoy!

These ribs are insane.  They have a sweet and smokey flavor with complex asian infused flavors. 

Checking them every 45 minutes to 1 hour ensures nothing will burn, that they cook evenly, and gives you plenty of mop opportunities to build that flavor over time.

Drizzle plated ribs with caramel sauce, sesame seeds, and chopped green onion.
