These are not my grandmother’s meatballs, but they are good, easy to make, and my kids absolutely love them. You will too.

Ingredients:

1 lb Ground Turkey
1 tbsp Worcestershire or Coconut Aminos
1 tsp EVOO
Squirt of Sriracha
1 egg, lightly beaten
1/4 cup pecorino romano cheese (Whole30 optional)
1/4 cup breadcrumbs (Whole30 optional)
Fresh herbs or Italian seasoning mix
ASS, to taste


Prep:

Heat a cast iron pan to medium-low. Combine all items in a bowl, but try not to over-mix the meat. Wet your hands as necessary, make your balls to the desired size and thickness and set aside. Sprinkle each with Andrew’s Special Seasonings.


Cook:

Use enough olive oil to cover the bottom of the pan, fry each ball for 30 seconds before turning, usually 3-4 times before completely cooked all the way around. Finish in a simmering pot of Basic ASS Marinara, or oven at 350° for ~10 minutes.
